1/4 cup Navitas Naturals chia seeds
1/4 cup pumpkin puree
1 1/2 cups coconut milk
1 tsp vanilla extract
1 generous Tbsp Trader Joe’s Pumpkin Pie Spice
1 Tbsp raw honey
DIRECTIONS: Put the coconut milk, vanilla, pumpkin puree, pumpkin pie spice, and raw honey into your blender. Process until smooth. Pour the chia seeds into a small mason jar and add the liquid mixture. Secure the lid and give the jar a good shake. Place the jar in your fridge and let the chia seeds gel overnight. Serve sprinkled with cinnamon powder in a small bowl.
